Orange Creamsicle Keto Dessert
- 1 cup heavy whipping cream
- 2 tablespoons low carb sweetener
- 1 tablespoon almond flour
- 1/8 teaspoon xanthan gum
- 1/8 teaspoon Pink Himalayan sea salt
- 2 egg yolks, beaten
- 1 – 1/2 teaspoon orange extract
- (optional) 1 drop safe red food coloring
- (optional) 1 drop safe yellow food coloring
- 1/2 cup heavy whipping cream
- 1/2 tablespoon low carb sweetener
- 1/2 teaspoon vanilla extract
- (optional) orange zest
In a medium sauce pan, warm heavy whipping cream over medium-medium-high heat until hot but not boiling.
Meanwhile, in a small bowl, mix sweetener, almond flour, salt, and xanthan gum.
Additionally, add 2 egg yolks to a small bowl, beat, and set aside.
Once the heavy whipping cream mixture is hot, add the dry ingredients.
Continue stirring as the sauce begins to thicken and to make sure the dry ingredients dissolve well. This could take anywhere from 2-5 minutes depending on the heat.
Temper egg yolks: Pour a small amount of hot mixture into the egg bowl. Mix quickly and add back into the hot mixture.
Continue stirring for another few minutes as sauce thickens even more. After it is thick enough but still pourable (about 2-4), remove from heat.
Add orange extract and optional food coloring. Mix well.
Add to serving dishes. Let set in the fridge until thick. About 30 minutes.
While the orange layer is cooling, prepare the whipped cream.
In a small bowl, add heavy whipping cream, sweetener, and vanilla.
With hand beaters, beat until peaks soft peaks form.
Add to the top of the orange layer and top with optional orange zest.
